Cupcakery Makery




I seem to have sweet fooditis, I can't stop making and eating sugary treats.
My latest obsession is baking cupcakes. I am not a baker, I hate going to all the effort, whisking, melting, creaming etc only for it to be a dud but these cupcakes are something else.



They are such a cinch, I thought I'd share the recipe

125g self raising flour
125g soft margarine
125g caster sugar
2 large eggs
1 tsp vanilla

Preheat yoru oven to 180 degrees.
Cream marg and sugar with the back of a fork until pale and smooth.
Add the eggs one at a time, just use your fork to mix them in.
Add the vanilla.
Add the flour in about 3 shakes, mixing well with the fork.
**Mmmm this cupcake mix tastes good enough to eat just like this :0)**
Line a 12 muffin tray with cupcake cases.
Dollop dessert spoonfuls in to cases and bake for 20mins or until golden brown.
Cool then ice with butter icing - thick buttery icing, coloured pink or with a splash of lemon juice.
Oh me, Oh my!!!
